Can you please suggest some rules variants to play Great Dalmuti for five players. I do reduce the deck up to the eight (o nine sometimes), and Great Peon just gives one card to Great Dalmuti.

What problems are you trying to solve? As it stands, this question is extremely open-ended, and there is no "right" answer; we aim to get solidly answerable questions on this site (check the faq). If you can say exactly what your troubles are with a 5-player game, we can give you direct answers. For instance, why do you remove 8 or 9 cards? How does that improve the game for you, and are you looking for similar improvements in the answers? – Paul Marshall Nov 14 '12 at 2:51
