But importantly, he doesn't need to assign any more than lethal damage. At the time he assigns, an unmodified Phytohydra would only need one damage to be "lethal" and the rest could be assigned to trample. It doesn't grow until you start resolving the damage.

Agreed. "Levelling up" is a great idea for cooperative games you play with friends to allow you to take on greater challenges together. It is a terrible idea for a competitive game you play with strangers. Punishing people for being new will only make sure that you never have any new players.

Playing with a dealer that has the same options as players would seem to be to be so different from normal blackjack that you couldn't even compare the two. The majority of blackjack strategy is based on decisions based on being able to see 1 (and only 1) of the dealer's cards, and the rules they have to follow.
