Say you already have a level 3 red grape. Can you harvest a field that has a 2-red-vine, and a 1-red-vine, and create a 1-grape and a 2-grape from it, as one harvest action?

Can I make wine from the fields I harvest with the Laborer?
The text for Laborer states:
Harvest up to 2 fields OR make up to 3 wine. You may lose 1 VP to do both.
If I pay my VP, can I make wine using grapes I have just harvested?
