When multiple replacement effects affect an event, the player affected by that event controlcontrols the order of in which the replacement effects are applied.

615.1. If two or more replacement and/or prevention effects are attempting to modify the way an event affects an object or player, the affected object’s controller (or its owner if it has no controller) or the affected player chooses one to apply, following the steps listed below. In your example, when faced with "Put 1 +1/+1 counters on that creature" you can choose to apply Winding Constrictor's replacement effect. Since "Put 2 +1/+1 counters on that creature" can still be affected by Corpsejack Menace, it's further modified for a net result of "Put 4 +1/+1 counters on that creature".
